Instructions
- Preheat the oven to 350°F (175°C) and prepare an angel food cake pan by not greasing it.
- In a mixing bowl, combine almond flour, erythritol, and baking powder. Whisk until well blended.
- In a separate bowl, beat the egg whites until they become frothy. Add the cream of tartar and continue beating until soft peaks form.
- Gradually fold the dry ingredients into the egg whites, adding the vanilla extract. Be gentle to maintain the airiness of the mixture.
- Pour the batter into the ungreased angel food cake pan, smoothing the top with a spatula.
- Bake for 25 to 30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Invert the cake pan immediately after removing it from the oven, allowing it to cool completely in an upside-down position.
- Once cooled, run a knife around the edges and carefully remove the cake from the pan.
