  • 4 chicken breasts, boneless and skinless
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 2 cups panko bread crumbs
  • 6 tablespoons parmesan cheese
  • 2 teaspoons Italian seasoning

Instructions

  1. If using full chicken breasts, butterfly them and pound to about 1/4-inch thickness for even cooking. Pat dry with paper towels.
  2. Season both sides of the chicken with salt and pepper.
  3. Set up your breading station with three shallow dishes: flour in the first, beaten eggs in the second, and in the third bowl combine panko breadcrumbs, parmesan cheese, and Italian seasoning.
  4. Dredge each chicken cutlet in flour, shaking off excess.
  5. Dip into beaten eggs, allowing any excess to drip off.
  6. Press firmly into the breadcrumb mixture, ensuring an even coating on both sides.
  7. Place the breaded cutlets on a plate and let them rest for 5 minutes.
  8. Preheat your air fryer to 380°F (193°C) for 3 minutes.
  9. Lightly spray the air fryer basket with cooking oil spray.
  10. Place the breaded cutlets in a single layer in the air fryer basket.
  11. Spray the tops of the cutlets lightly with oil spray for optimal browning.
  12. Cook for 5-6 minutes, then flip the cutlets, spray lightly again, and cook for another 4-5 minutes until golden brown and internal temperature reaches 165°F (74°C).
  13. Remove and let rest for 3 minutes before serving.
