Instructions
- If using full chicken breasts, butterfly them and pound to about 1/4-inch thickness for even cooking. Pat dry with paper towels.
- Season both sides of the chicken with salt and pepper.
- Set up your breading station with three shallow dishes: flour in the first, beaten eggs in the second, and in the third bowl combine panko breadcrumbs, parmesan cheese, and Italian seasoning.
- Dredge each chicken cutlet in flour, shaking off excess.
- Dip into beaten eggs, allowing any excess to drip off.
- Press firmly into the breadcrumb mixture, ensuring an even coating on both sides.
- Place the breaded cutlets on a plate and let them rest for 5 minutes.
- Preheat your air fryer to 380°F (193°C) for 3 minutes.
- Lightly spray the air fryer basket with cooking oil spray.
- Place the breaded cutlets in a single layer in the air fryer basket.
- Spray the tops of the cutlets lightly with oil spray for optimal browning.
- Cook for 5-6 minutes, then flip the cutlets, spray lightly again, and cook for another 4-5 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Remove and let rest for 3 minutes before serving.

- For a low-carb option, substitute almond flour or crushed pork rinds instead of all-purpose flour.
