Instructions
- Preheat the air fryer to 375°F (190°C).
- In a large bowl, add the grated zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the grated zucchinis to remove as much moisture as possible.
- In a mixing bowl, combine the drained zucchinis, breadcrumbs (or almond flour), and the beaten egg. Add any additional seasonings you prefer, like garlic powder or herbs.
- Mix until well combined, ensuring the zucchini is evenly coated with the egg and breadcrumbs.
- Form the mixture into small patties or fritters.
- Place the fritters in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let them cool slightly before serving.
