A delicious and healthy chicken dish stuffed with broccoli and cheddar cheese.

- 2 large chicken breasts
- 1 cup broccoli florets, steamed and chopped
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice each chicken breast horizontally to create a pocket, without cutting all the way through.
- In a bowl, combine the steamed broccoli and shredded cheddar cheese. Mix well.
- Stuff each chicken breast with the broccoli and cheese mixture, securing the openings with toothpicks if necessary.
- Season the outside of the chicken breasts with salt and pepper to taste.
- Heat a skillet over medium heat and add olive oil. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
Notes
- To enhance flavor, you can add garlic powder or onion powder to the stuffing mixture.
- Serve with a side salad or steamed vegetables for a complete meal.
