Cauliflower Jalapeno Popper Casserole is a deliciously cheesy dish with a spicy kick. Perfect as a side or a main course, it’s sure to please all palates!

- 1 head cauliflower, chopped into florets
- 4 jalapenos, diced (remove seeds for less heat)
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup breadcrumbs
- 1/4 cup green onions, sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5 minutes until tender. Drain and set aside.
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, diced jalapenos, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Add the cooked cauliflower to the cheese mixture and fold gently until the cauliflower is well coated.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Sprinkle breadcrumbs and sliced green onions on top of the casserole.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden brown on top.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- Feel free to adjust the number of jalapenos according to your spice preference.
- Can be made ahead of time and baked just before serving.
