Description

Cauliflower Jalapeno Popper Casserole is a deliciously cheesy dish with a spicy kick. Perfect as a side or a main course, it’s sure to please all palates!


Ingredients

  • 1 head cauliflower, chopped into florets
  • 4 jalapenos, diced (remove seeds for less heat)
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5 minutes until tender. Drain and set aside.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, diced jalapenos, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Add the cooked cauliflower to the cheese mixture and fold gently until the cauliflower is well coated.
  5. Transfer the mixture to a greased baking dish and spread it evenly.
  6. Sprinkle breadcrumbs and sliced green onions on top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown on top.
  8. Remove from the oven and let it cool for a few minutes before serving.
