Description

A delicious low carb dinner featuring ground beef and riced cauliflower, topped with melted cheddar cheese.


Ingredients

  • 1 lb ground beef
  • 1 medium head of cauliflower, riced
  • 1 cup shredded cheddar cheese
  • 1 taco seasoning packet
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: sliced green onions and sour cream for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Increase the heat to medium-high, then add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, approximately 5-7 minutes.
  4. Drain excess fat from the skillet, if necessary.
  5. Sprinkle the taco seasoning over the cooked beef and pour in 1/2 cup of water. Stir to combine and let simmer for 5 minutes.
  6. While the beef is simmering, place the riced cauliflower in a separate pan with a splash of water over medium heat. Cover and cook until tender, about 5-7 minutes.
  7. Once the cauliflower is cooked, drain any excess water and add it to the skillet with the taco beef mixture. Stir thoroughly to combine.
  8. Sprinkle the shredded cheddar cheese over the top of the mixture and cover the skillet. Allow the cheese to melt for about 2-3 minutes.
  9. Taste and season with salt and pepper as needed.
  10. Serve hot, optionally topped with sliced green onions and a dollop of sour cream.

  • For a spicier version, add jalapeños or hot sauce.
