Description
A delicious low carb dinner featuring ground beef and riced cauliflower, topped with melted cheddar cheese.
Ingredients

- 1 lb ground beef
- 1 medium head of cauliflower, riced
- 1 cup shredded cheddar cheese
- 1 taco seasoning packet
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: sliced green onions and sour cream for serving
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Increase the heat to medium-high, then add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, approximately 5-7 minutes.
- Drain excess fat from the skillet, if necessary.
- Sprinkle the taco seasoning over the cooked beef and pour in 1/2 cup of water. Stir to combine and let simmer for 5 minutes.
- While the beef is simmering, place the riced cauliflower in a separate pan with a splash of water over medium heat. Cover and cook until tender, about 5-7 minutes.
- Once the cauliflower is cooked, drain any excess water and add it to the skillet with the taco beef mixture. Stir thoroughly to combine.
- Sprinkle the shredded cheddar cheese over the top of the mixture and cover the skillet. Allow the cheese to melt for about 2-3 minutes.
- Taste and season with salt and pepper as needed.
- Serve hot, optionally topped with sliced green onions and a dollop of sour cream.
Notes
- This dish can be customized with additional toppings of your choice.
- For a spicier version, add jalapeños or hot sauce.
