Ingredients

- 1 cup rolled oats
- 1 scoop vanilla protein powder
- 1 tablespoon ground cinnamon
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 cup milk of choice
- Optional: chopped nuts or raisins
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, combine the rolled oats, protein powder, ground cinnamon, baking powder, and any optional ingredients you wish to add (like nuts or raisins).
- In another bowl, whisk together the honey (or maple syrup), eggs, applesauce, vanilla extract, and milk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the muffin tin for 5 minutes before transferring to a wire rack to cool completely.

- These muffins can be stored in an airtight container for up to 5 days.
