Description

Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/4 cup coconut sugar (for filling)
  • Extra cinnamon (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, tapioca flour, baking powder, cinnamon, and salt. Mix well.
  3. In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract until fully combined.
  4. Slowly pour the wet ingredients into the dry ingredients, mixing until a dough forms.
  5. Transfer the dough onto a piece of parchment paper and flatten it with your hands or a rolling pin to about 1/4 inch thick.
  6. Sprinkle coconut sugar and extra cinnamon evenly over the flattened dough.
  7. Carefully roll the dough into a log shape, starting from one end to the other.
  8. Slice the rolled dough into 1-inch thick pieces and place them in the prepared baking dish.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. Remove from the oven and allow to cool slightly before serving.
