- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup tapioca flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- 1/4 cup coconut sugar (for filling)
- Extra cinnamon (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, tapioca flour, baking powder, cinnamon, and salt. Mix well.
- In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract until fully combined.
- Slowly pour the wet ingredients into the dry ingredients, mixing until a dough forms.
- Transfer the dough onto a piece of parchment paper and flatten it with your hands or a rolling pin to about 1/4 inch thick.
- Sprinkle coconut sugar and extra cinnamon evenly over the flattened dough.
- Carefully roll the dough into a log shape, starting from one end to the other.
- Slice the rolled dough into 1-inch thick pieces and place them in the prepared baking dish.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and allow to cool slightly before serving.
