Instructions
- In a mixing bowl, combine the cottage cheese, egg, and olive oil. Mix until smooth.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Knead the dough on a floured surface for about 2-3 minutes until it is smooth and elastic.
- Let the dough rest for 10 minutes at room temperature.
- Preheat a non-stick skillet over medium heat.
- Divide the dough into equal portions and roll each portion into a ball.
- Flatten each ball into a round shape about 1/4 inch thick.
- Cook each flatbread in the skillet for 2-3 minutes on each side, until golden brown.
- Once cooked, remove from the skillet and let cool slightly. Serve warm, garnished with fresh herbs if desired.
