Description

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrots and cook for 3-4 minutes until they start to soften.
  5. Stir in the cumin and smoked paprika, cooking for an additional minute.
  6. Pour in the vegetable broth and add the chickpeas.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  8. Season with salt and pepper to taste.
  9. Using an immersion blender, blend the soup until it reaches your desired consistency (smooth or chunky).
  10. Serve hot, garnished with fresh parsley.
