Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrots and cook for 3-4 minutes until they start to soften.
- Stir in the cumin and smoked paprika, cooking for an additional minute.
- Pour in the vegetable broth and add the chickpeas.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Season with salt and pepper to taste.
- Using an immersion blender, blend the soup until it reaches your desired consistency (smooth or chunky).
- Serve hot, garnished with fresh parsley.
