- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1 cup cherry tomatoes
- Salt and pepper to taste
- Olive oil for cooking
- Minced garlic (1-2 cloves)
- Italian seasoning to taste
- Fresh basil for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside on a plate.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and stir well, scraping any browned bits from the bottom of the skillet.
- Add the cherry tomatoes and Italian seasoning to the cream and simmer for 5 minutes until the tomatoes soften.
- Return the chicken breasts to the skillet, cover with the creamy sauce, and cook for an additional 2 minutes.
- Serve the chicken hot, garnished with fresh basil if desired.
