Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup cherry tomatoes
  • Salt and pepper to taste
  • Olive oil for cooking
  • Minced garlic (1-2 cloves)
  • Italian seasoning to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  6. Pour in the heavy cream and stir well, scraping any browned bits from the bottom of the skillet.
  7. Add the cherry tomatoes and Italian seasoning to the cream and simmer for 5 minutes until the tomatoes soften.
  8. Return the chicken breasts to the skillet, cover with the creamy sauce, and cook for an additional 2 minutes.
  9. Serve the chicken hot, garnished with fresh basil if desired.
