Ingredients

Scale

Chicken & Marinade

  • 12 pieces skin-on boneless chicken thighs (substitute with wings or breast if preferred)
  • 3 tbsp sake (or dry white wine)
  • 3 tbsp soy sauce (or tamari for a gluten-free option)
  • 1 tbsp sesame oil
  • 1-inch grated ginger
  • 2 cloves grated garlic
  • 1 tsp salt
  • 1 tsp black pepper

Batter

  • 1½ cups tapioca starch (or potato/corn starch as alternatives)
  • 1 cup soda water
  • 2 tsp baking powder
  • 1 tbsp garlic powder

Hot Honey Sauce

  • ½ cup honey
  • 3 tbsp sliced green onions
  • 2 tbsp soy sauce
  • 2 tsp red chili pepper flakes

Optional Garnish

  • Sliced green onions
  • Toasted sesame seeds

Instructions

Step1: Prepare the Marinade

  1. Place chicken in a large bowl.
  2. Add sake, soy sauce, sesame oil, ginger, garlic, salt, and pepper. Mix well.
  3. Marinate for at least 30 minutes or overnight for best results.

Step2: Create the Batter

  1. In a bowl, combine tapioca starch, soda water, baking powder, and garlic powder.
  2. Stir until the mixture is smooth with no lumps.

Step3: Fry the Chicken

  1. Heat oil in a skillet or wok over medium-high heat.
  2. Coat marinated chicken in the batter.
  3. Fry the chicken in small batches until golden.
  4. For extra crispiness, double fry after resting the chicken.

Step4: Prepare the Hot Honey Sauce

  1. In a saucepan, combine honey, soy sauce, chili flakes, and green onions.
  2. Simmer until well mixed and slightly thickened.

Notes

  • Tip 1: Double frying is essential for that extra-crispy texture.
  • Tip 2: Use tapioca starch for a lighter, crunchier batter.
  • Tip 3: Adjust chili flakes in the sauce to control spiciness.
