- 5 cups (40 oz) chicken broth
- 3 cups (420 g) rotisserie chicken, shredded or cubed
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- ½ teaspoon dried thyme
- ¼ teaspoon cayenne pepper (optional)
For Dumplings:
- 2 cups (240 g) Bisquick (homemade or store-bought)
- ⅔ cup (163 g) whole milk
- Fresh parsley, chopped for garnish
Instructions
Step1: Prepare the Base
- Melt butter in a Dutch oven over medium heat.
- Add diced onions, carrots, and celery. Cook for 8–10 minutes until softened.
Step2: Create the Broth
- Sprinkle flour over the vegetables and stir to coat.
- Gradually pour in chicken broth while whisking to ensure a smooth mixture.
Step3: Add Chicken and Seasonings
- Mix in chicken, salt, pepper, thyme, and cayenne (if using). Bring the soup to a boil.
Step4: Make the Dumplings
- In a medium bowl, combine Bisquick and milk to form a soft dough.
Step5: Cook the Dumplings
- Drop spoonfuls of the dough onto the boiling soup.
- Cover and cook for 10 minutes. Then uncover and cook for another 10 minutes.
Step6: Garnish and Serve
- Sprinkle fresh parsley on top and serve warm.
