Ingredients
- 4 large russet potatoes, peeled and halved
- 2 large eggs, room temperature
- ¼ cup (31g) all-purpose flour
- 1 teaspoon kosher salt
- 1 cup (218g) vegetable or canola oil (for frying)
Optional Substitutions:
- Use Yukon Gold potatoes for a waxier texture.
- Replace all-purpose flour with gluten-free alternatives for dietary preferences.
Instructions
Step 1: Prepare the Potatoes
Wash, peel, and parboil the potatoes for six minutes. Cool slightly, then grate them using a box grater.
Step 2: Mix the Ingredients
Combine the grated potatoes, eggs, flour, and salt in a bowl. Mix thoroughly.
Step 3: Shape the Patties
Form the mixture into patties of your desired shape. Freeze for 45–60 minutes on a parchment-lined baking sheet.
Step 4: Fry to Perfection
Heat oil to 350°F and fry the patties in batches of 1–3. Cook each side for 3–5 minutes until golden brown. Drain on a paper towel-lined plate.
Notes
- Freeze patties before frying for better shape retention.
- Always ensure the oil is at 350°F before adding a new batch.
- Sprinkle a pinch of salt on freshly fried patties for extra flavor.
