Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 lb ground beef (lean)
  • 1 medium onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • ¼ teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • Salt & pepper to taste
  • ¼ cup tomato paste
  • 3 cups beef broth (or more as needed)
  • 1 (28-oz) can diced tomatoes
  • 1 (16-oz) box rigatoni pasta (uncooked)
  • Grated parmesan (optional for serving)

Instructions

Step1: Brown the Beef

  • Heat olive oil in a medium-large pot.
  • Add the ground beef, season with salt and pepper, and cook until browned. Drain excess grease if needed.

Step2: Sauté the Vegetables

  • Add onions, carrots, and celery to the beef.
  • Stir and cook for 2–3 minutes until softened.

Step3: Season and Add Tomato Paste

  • Mix in garlic powder, Italian seasoning, and tomato paste.
  • Cook for another minute until the tomato paste becomes fragrant.

Step4: Add Liquids

  • Pour in beef broth and scrape any browned bits from the bottom of the pan.
  • Stir in diced tomatoes.

Step5: Cook the Pasta

  • Add uncooked rigatoni to the pot. Ensure the pasta is submerged in the liquid.
  • Bring to a boil, reduce heat to a simmer, and cook for 15 minutes. Stir occasionally to prevent sticking.

Notes

  • Chop efficiently: Use a food processor for finely chopped vegetables to save time.
  • Don’t pre-cook pasta: Cooking it in the sauce ensures maximum flavor absorption.
  • Sauté tomato paste: This deepens its flavor before adding liquids.
