  • 1 onion, diced

  • 56 leaves fresh basil or 2 tsp dried basil
  • 400g (14 oz) canned diced tomatoes
  • 500g (17 oz) tomato passata
  • 250ml (1 cup) water
  • 2 tsp dried oregano
  • 450g (1 lb) ground beef (or a mix of beef and pork)
  • Salt and pepper to taste
  • 450g (1 lb) spaghetti

Instructions

Step1: Prepare the Soffritto

Heat olive oil in a large pan or Dutch oven over low heat. Add diced onion, carrots, celery, and minced garlic. Cook for 10 minutes, stirring occasionally, until soft but not browned.

Step2: Cook the Meat

Increase the heat slightly, add the ground beef, and cook until browned and no longer pink. Break the meat into small pieces as it cooks.

Step3: Add Tomatoes and Herbs

Pour in the canned tomatoes, tomato passata, and water. Add dried oregano and fresh basil leaves, reserving a few for garnish. Season with salt and pepper. Stir everything well.

Step4: Simmer the Sauce

Lower the heat, partially cover the pan, and let the sauce simmer for 2.5-3 hours. Stir occasionally to prevent sticking.

Step5: Cook the Spaghetti

Boil a large pot of salted water and cook the spaghetti according to the package instructions. Drain and add it to the sauce. Stir to combine.
