  • 2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1½ cups heavy whipping cream
  • 1½ cups whole milk
  • 1 cup fresh spinach
  • 1 cup grated parmesan cheese
  • 1 cup halved cherry tomatoes
  • Garnishes: extra parmesan cheese and chopped parsley

Instructions

Step1: Prepare the Chicken

  1. Pat the chicken dry and season with paprika, garlic powder, salt, and pepper.
  2. Heat vegetable oil in a skillet over medium heat. Cook the chicken for 7-8 minutes per side until it reaches 165°F internally.
  3. Set the chicken aside, tenting it to keep warm.

Step2: Cook the Sauce

  1. In the same skillet, melt butter. Add shallots and sun-dried tomatoes, cooking until softened.
