  • 1 can (14 oz) diced tomatoes
  • 2 bell peppers (red and yellow), chopped
  • 2 carrots, sliced
  • 2 cups beef broth
  • 1 bay leaf
  • 1 teaspoon caraway seeds
  • 1 tablespoon fresh marjoram (or 1 teaspoon dried)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for serving)
  • Sour cream (for serving)
  • Egg noodles or crusty bread (for serving)

Instructions

  1. Pat the beef chunks dry with paper towels and season with salt and pepper.
  2. Heat vegetable oil in a large Dutch oven over medium-high heat and brown the meat on all sides. Transfer to a plate.
  3. In the same pot, cook diced onions until translucent. Add garlic and cook until fragrant.
  4. Remove pot from heat, stir in the paprika, and return to heat.
  5. Add tomato paste, stir for 1-2 minutes, and then add diced tomatoes, carrots, bell peppers, beef broth, bay leaf, and caraway seeds.
  6. Return the browned beef to the pot, bring to a boil, reduce heat, cover, and simmer for 1.5-2 hours, stirring occasionally.
  7. Stir in marjoram, adjust seasoning, and remove bay leaf before serving. Serve over egg noodles or with crusty bread, topped with sour cream and fresh parsley.
