- 2 tablespoons vegetable oil
- 2 large onions, diced
- 3 cloves garlic, minced

- 1 can (14 oz) diced tomatoes
- 2 bell peppers (red and yellow), chopped
- 2 carrots, sliced
- 2 cups beef broth
- 1 bay leaf
- 1 teaspoon caraway seeds
- 1 tablespoon fresh marjoram (or 1 teaspoon dried)
- Salt and black pepper to taste
- Fresh parsley, chopped (for serving)
- Sour cream (for serving)
- Egg noodles or crusty bread (for serving)
Instructions
- Pat the beef chunks dry with paper towels and season with salt and pepper.
- Heat vegetable oil in a large Dutch oven over medium-high heat and brown the meat on all sides. Transfer to a plate.
- In the same pot, cook diced onions until translucent. Add garlic and cook until fragrant.
- Remove pot from heat, stir in the paprika, and return to heat.
- Add tomato paste, stir for 1-2 minutes, and then add diced tomatoes, carrots, bell peppers, beef broth, bay leaf, and caraway seeds.
- Return the browned beef to the pot, bring to a boil, reduce heat, cover, and simmer for 1.5-2 hours, stirring occasionally.
- Stir in marjoram, adjust seasoning, and remove bay leaf before serving. Serve over egg noodles or with crusty bread, topped with sour cream and fresh parsley.
