Healthy Strawberry Pancakes are a delicious flourless and fluffy breakfast option made with ripe strawberries and bananas.
Ingredients

- 1 cup ripe strawberries, chopped
- 2 ripe bananas
- 2 large eggs
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla extract
Instructions
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the eggs to the mashed bananas and whisk until well combined.
- Stir in the baking powder and vanilla extract.
- Gently fold in the chopped strawberries until evenly distributed.
- Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or coconut oil.
- Pour a small amount of batter onto the skillet for each pancake, using about 1/4 cup for each.
- Cook for about 2-3 minutes or until bubbles form on the surface.
- Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
- Repeat the process until all the batter is used.
- Serve warm with additional strawberries or maple syrup if desired.
Notes
- For a sweeter taste, additional sweeteners can be added.
- Make sure the skillet is not too hot to avoid burning the pancakes.
