Description

Healthy Strawberry Pancakes are a delicious flourless and fluffy breakfast option made with ripe strawberries and bananas.


Ingredients

  • 1 cup ripe strawberries, chopped
  • 2 ripe bananas
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, mash the ripe bananas until smooth.
  2. Add the eggs to the mashed bananas and whisk until well combined.
  3. Stir in the baking powder and vanilla extract.
  4. Gently fold in the chopped strawberries until evenly distributed.
  5. Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or coconut oil.
  6. Pour a small amount of batter onto the skillet for each pancake, using about 1/4 cup for each.
  7. Cook for about 2-3 minutes or until bubbles form on the surface.
  8. Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
  9. Repeat the process until all the batter is used.
  10. Serve warm with additional strawberries or maple syrup if desired.

Notes

  • For a sweeter taste, additional sweeteners can be added.
  • Make sure the skillet is not too hot to avoid burning the pancakes.
