- 2 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 large eggs
- 1/4 cup milk
- Olive oil for frying
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, whisk together the eggs and milk until well combined.
- Dip each chicken breast first into the egg mixture, allowing the excess to drip off.
- Coat the chicken in the Parmesan and breadcrumb mixture, pressing lightly to adhere.
- In a skillet, heat olive oil over medium heat. Add the coated chicken breasts and cook for about 4-5 minutes on each side, or until golden brown.
- Transfer the cooked chicken to a baking dish and place it in the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
