Ingredients

  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 large eggs
  • 1/4 cup milk
  • Olive oil for frying
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  3. In another bowl, whisk together the eggs and milk until well combined.
  4. Dip each chicken breast first into the egg mixture, allowing the excess to drip off.
  5. Coat the chicken in the Parmesan and breadcrumb mixture, pressing lightly to adhere.
  6. In a skillet, heat olive oil over medium heat. Add the coated chicken breasts and cook for about 4-5 minutes on each side, or until golden brown.
  7. Transfer the cooked chicken to a baking dish and place it in the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
