A festive and creamy low-carb eggnog that’s perfect for holiday celebrations, suitable for those on a keto diet.

- 4 large eggs
- 1 cup unsweetened almond milk
- 1 cup heavy whipping cream
- 1/2 cup low-carb sweetener (such as erythritol or stevia)
- 1 tsp vanilla extract
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- Pinch of salt
- Optional: bourbon or rum for serving
Instructions
- In a mixing bowl, separate the egg yolks from the egg whites. Place the egg yolks in a large bowl and the egg whites in a separate bowl.
- Add the low-carb sweetener to the egg yolks and whisk until well combined and creamy.
- In a saucepan over medium heat, combine the almond milk and heavy whipping cream. Heat the mixture until warm but not boiling.
- Gradually pour the warm almond milk and cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.
- Pour the combined mixture back into the saucepan and cook over low heat, stirring continuously until slightly thickened (do not let it boil).
- Once thickened, remove from heat and stir in vanilla extract, ground nutmeg, ground cinnamon, and salt.
- In the separate bowl, whip the egg whites until stiff peaks form. Gently fold the whipped egg whites into the eggnog mixture until well incorporated.
- Chill the eggnog in the refrigerator for at least 2 hours before serving for the best flavor and thickness.
- Serve chilled, optionally topped with a sprinkle of additional nutmeg or a splash of bourbon or rum if desired.
