Description

A festive and creamy low-carb eggnog that’s perfect for holiday celebrations, suitable for those on a keto diet.


Ingredients

  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1 cup heavy whipping cream
  • 1/2 cup low-carb sweetener (such as erythritol or stevia)
  • 1 tsp vanilla extract
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • Optional: bourbon or rum for serving

Instructions

  1. In a mixing bowl, separate the egg yolks from the egg whites. Place the egg yolks in a large bowl and the egg whites in a separate bowl.
  2. Add the low-carb sweetener to the egg yolks and whisk until well combined and creamy.
  3. In a saucepan over medium heat, combine the almond milk and heavy whipping cream. Heat the mixture until warm but not boiling.
  4. Gradually pour the warm almond milk and cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.
  5. Pour the combined mixture back into the saucepan and cook over low heat, stirring continuously until slightly thickened (do not let it boil).
  6. Once thickened, remove from heat and stir in vanilla extract, ground nutmeg, ground cinnamon, and salt.
  7. In the separate bowl, whip the egg whites until stiff peaks form. Gently fold the whipped egg whites into the eggnog mixture until well incorporated.
  8. Chill the eggnog in the refrigerator for at least 2 hours before serving for the best flavor and thickness.
  9. Serve chilled, optionally topped with a sprinkle of additional nutmeg or a splash of bourbon or rum if desired.
