Description

Honey Roasted Carrots with Whipped Feta & Crispy Garlic is a delightful dish that combines sweet and savory flavors. The creamy, tangy whipped feta complements the honeyed carrots perfectly, while crispy garlic adds a delicious crunch.


Ingredients

  • 1 pound of baby carrots, peeled
  • 2 tablespoons of honey
  • 2 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
  • 4 ounces of feta cheese, crumbled
  • 1/4 cup of Greek yogurt
  • 2 cloves of garlic, thinly sliced
  • 1 tablespoon of fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the peeled baby carrots, honey, olive oil, salt, and pepper. Toss well to ensure the carrots are evenly coated.
  3. Spread the coated carrots on a baking sheet in a single layer.
  4. Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, stirring halfway through for even cooking.
  5. While the carrots are roasting, prepare the whipped feta. In a food processor, combine the crumbled feta and Greek yogurt. Blend until smooth and creamy. Set aside.
  6. In a small skillet, heat a tablespoon of olive oil over medium heat. Add the sliced garlic and sauté until golden and crispy, about 2-3 minutes, being careful not to burn it. Remove from heat and drain on paper towels.
  7. Once the carrots are done, remove them from the oven and let cool slightly.
  8. To serve, place the whipped feta on a serving plate, top with the roasted carrots, and sprinkle with crispy garlic and chopped parsley.
