- 1 pound of baby carrots, peeled
- 2 tablespoons of honey
- 2 tablespoons of olive oil
- Salt to taste
- Pepper to taste
- 4 ounces of feta cheese, crumbled
- 1/4 cup of Greek yogurt
- 2 cloves of garlic, thinly sliced
- 1 tablespoon of fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the peeled baby carrots, honey, olive oil, salt, and pepper. Toss well to ensure the carrots are evenly coated.
- Spread the coated carrots on a baking sheet in a single layer.
- Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, stirring halfway through for even cooking.
- While the carrots are roasting, prepare the whipped feta. In a food processor, combine the crumbled feta and Greek yogurt. Blend until smooth and creamy. Set aside.
- In a small skillet, heat a tablespoon of olive oil over medium heat. Add the sliced garlic and sauté until golden and crispy, about 2-3 minutes, being careful not to burn it. Remove from heat and drain on paper towels.
- Once the carrots are done, remove them from the oven and let cool slightly.
- To serve, place the whipped feta on a serving plate, top with the roasted carrots, and sprinkle with crispy garlic and chopped parsley.

- For extra flavor, you can add a pinch of chili flakes to the whipped feta.
