- 2 cups almond flour
- 1/2 cup granulated erythritol (or any sugar substitute)
- 1/2 cup olive oil
- 4 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened almond milk
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 350°F (180°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, combine the almond flour, erythritol, baking powder, and salt. Mix well.
- In another bowl, whisk together the eggs, olive oil, almond milk, apple cider vinegar, lemon zest, and vanilla extract until smooth.
- Slowly pour the wet ingredients into the dry ingredients, stirring until well combined and no lumps remain.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
