Ingredients

  • 1/2 cup granulated erythritol (or any sugar substitute)
  • 1/2 cup olive oil
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, combine the almond flour, erythritol, baking powder, and salt. Mix well.
  3. In another bowl, whisk together the eggs, olive oil, almond milk, apple cider vinegar, lemon zest, and vanilla extract until smooth.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring until well combined and no lumps remain.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
