- 1 cup heavy cream
- 1/2 cup erythritol
- 1/4 cup melted butter
- 4 large eggs
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup chopped pistachios
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (180°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the almond flour, erythritol, ground cinnamon, and baking powder.
- In another bowl, whisk together the eggs, heavy cream, melted butter, and vanilla extract until smooth.
- Slowly add the wet ingredients to the dry ingredients, mixing until well combined.
- Fold in the chopped walnuts and chopped pistachios gently until evenly distributed.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, cut into slices and serve as desired.
