Keto Beef Enchiladas are an incredible low-carb option for a comforting meal that the whole family will love!

- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1 cup low-carb enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chili powder
- 8 large zucchini slices (for wrapping)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
- Stir in cumin, garlic powder, onion powder, and chili powder. Cook for an additional 2 minutes.
- In a separate bowl, mix half of the cheese with the seasoned beef.
- Assemble the enchiladas: place a spoonful of the beef mixture in the center of each zucchini slice and roll them up.
- Spread a small amount of enchilada sauce in a baking dish. Place the rolled zucchini enchiladas seam-side down in the dish.
- Pour the remaining enchilada sauce over the top of the rolled enchiladas.
- Sprinkle the remaining cheddar cheese over the top.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
- For extra spiciness, consider adding diced jalapeños to the beef mixture.
- These enchiladas can be made ahead of time and stored in the refrigerator before baking.
