Keto Beef Enchiladas are an incredible low-carb option for a comforting meal that the whole family will love!


Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup low-carb enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 8 large zucchini slices (for wrapping)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  3. Stir in cumin, garlic powder, onion powder, and chili powder. Cook for an additional 2 minutes.
  4. In a separate bowl, mix half of the cheese with the seasoned beef.
  5. Assemble the enchiladas: place a spoonful of the beef mixture in the center of each zucchini slice and roll them up.
  6. Spread a small amount of enchilada sauce in a baking dish. Place the rolled zucchini enchiladas seam-side down in the dish.
  7. Pour the remaining enchilada sauce over the top of the rolled enchiladas.
  8. Sprinkle the remaining cheddar cheese over the top.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  10. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  11. Garnish with chopped cilantro before serving.

Notes

  • For extra spiciness, consider adding diced jalapeños to the beef mixture.
  • These enchiladas can be made ahead of time and stored in the refrigerator before baking.
