Ingredients

- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 small low-carb tortillas
- Olive oil for brushing
Instructions
- Begin by preheating your oven to 400°F (200°C).
- In a skillet over medium heat, brown the ground beef. Drain any excess fat.
- Add the garlic powder, cumin, chili powder, onion powder, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes.
- Remove the skillet from heat and stir in the shredded cheese until melted and well combined.
- Lay a low-carb tortilla on a flat surface and place a portion of the beef mixture along one edge.
- Roll the tortilla tightly around the filling and place it seam-side down on a baking sheet.
- Repeat the process with the remaining tortillas and filling.
- Brush the taquitos lightly with olive oil to promote browning.
- Bake in the preheated oven for 15-20 minutes or until the tortillas are golden and crispy.
- Remove from the oven and allow to cool for a few minutes before serving.
