Keto Butter Tarts are an excellent way to indulge without the carbs. These sweet treats are perfect for anyone on a keto diet, offering a delicious combination of buttery crust and sweet pecan filling.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup sugar-free pecans, chopped
  • 1/4 cup sugar-free maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine almond flour, coconut flour, and erythritol until well mixed.
  3. Add melted butter, egg, vanilla extract, and salt to the flour mixture and stir until a dough forms.
  4. Divide the dough evenly into the muffin tin, pressing it down to form a crust at the bottom of each cup.
  5. In another bowl, mix chopped pecans and sugar-free maple syrup until the pecans are well coated.
  6. Spoon the pecan filling evenly into each tart shell, filling them about 2/3 full.
  7. Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and the filling is bubbly.
  8. Remove from the oven and allow the tarts to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
