Delicious keto-friendly cinnamon pretzels made with fat head dough, perfect for a low-carb snack.


Ingredients

  • 1 1/2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • 1 1/4 cups almond flour
  • 1 tbsp baking powder
  • 1/4 cup cinnamon
  • 1/4 cup erythritol (or preferred sweetener)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 1 minute or until both are melted.
  3. Remove from the microwave and mix until well combined. Allow the mixture to cool slightly.
  4. Add the egg to the cheese mixture and stir until fully incorporated.
  5. In another bowl, combine the almond flour, baking powder, and erythritol. Mix well.
  6. Gradually add the dry ingredients to the cheese mixture, stirring until a dough forms.
  7. Divide the dough into 6 equal portions. Roll each portion into a rope, then shape it into a pretzel.
  8. Place the pretzels on the prepared baking sheet. If desired, brush with a beaten egg for a shiny finish.
  9. In a small bowl, mix the cinnamon and erythritol together. Sprinkle the mixture over the pretzels.
  10. Bake in the preheated oven for 12-15 minutes or until golden brown.
