Ingredients

  • 1/3 cup erythritol sweetener
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with muffin liners.
  2. In a large mixing bowl, combine the almond flour, erythritol, baking powder, ground cinnamon, and salt. Mix well to ensure there are no clumps.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
  5. Divide the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack.
  8. Once cooled, brush the tops of the muffins with melted butter and sprinkle a mixture of 1 tablespoon cinnamon and 2 tablespoons erythritol over the tops.
  9. Serve warm and enjoy!
