- 2 cups almond flour
- 1/3 cup erythritol sweetener
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/4 cup melted butter (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with muffin liners.
- In a large mixing bowl, combine the almond flour, erythritol, baking powder, ground cinnamon, and salt. Mix well to ensure there are no clumps.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
- Divide the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack.
- Once cooled, brush the tops of the muffins with melted butter and sprinkle a mixture of 1 tablespoon cinnamon and 2 tablespoons erythritol over the tops.
- Serve warm and enjoy!
Notes
- These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
- You can substitute coconut oil with more melted butter if desired.
