- 2 large low-carb tortillas
- 4 oz cream cheese, softened
- 2 tablespoons erythritol or preferred sweetener
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Butter for frying
Instructions
- In a mixing bowl, combine the softened cream cheese, erythritol, ground cinnamon, and vanilla extract. Mix until smooth and well combined.
- Spread the cream cheese mixture evenly over each tortilla, leaving a small border around the edges.
- Roll each tortilla tightly into a cylinder, starting from one edge.
- Heat a skillet over medium heat and add a small amount of butter.
- Once the butter is melted, place the rolled tortillas seam-side down in the skillet.
- Cook for 2-3 minutes or until golden brown, then carefully flip to cook the other side until golden.
- Remove from the skillet and let cool slightly before slicing into bite-sized pieces.
- Optional: Sprinkle additional cinnamon and sweetener on top before serving.
