Description

Keto Coconut Bars are a delicious sugar-free treat that satisfy your sweet tooth while keeping you on track with your keto diet.


Ingredients

  • 2 cups unsweetened shredded coconut
  • 1/2 cup coconut cream
  • 1/4 cup erythritol or other sugar substitute
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Optional: 1/2 cup dark chocolate chips (sugar-free)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine the unsweetened shredded coconut, coconut cream, erythritol, vanilla extract, and a pinch of salt. Mix until well combined.
  3. If using dark chocolate chips, fold them into the mixture.
  4. Press the coconut mixture firmly into the prepared baking dish, spreading it evenly.
  5. Bake in the preheated oven for 15-20 minutes, or until the top is golden brown.
  6. Remove from the oven and allow it to cool completely in the baking dish.
  7. Once cooled, lift the bars out of the dish using the parchment paper. Cut into squares or bars.
  8. Store in an airtight container in the refrigerator.
