- 2 cups unsweetened shredded coconut
- 1/2 cup coconut cream
- 1/4 cup erythritol or other sugar substitute
- 1 teaspoon vanilla extract
- A pinch of salt
- Optional: 1/2 cup dark chocolate chips (sugar-free)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine the unsweetened shredded coconut, coconut cream, erythritol, vanilla extract, and a pinch of salt. Mix until well combined.
- If using dark chocolate chips, fold them into the mixture.
- Press the coconut mixture firmly into the prepared baking dish, spreading it evenly.
- Bake in the preheated oven for 15-20 minutes, or until the top is golden brown.
- Remove from the oven and allow it to cool completely in the baking dish.
- Once cooled, lift the bars out of the dish using the parchment paper. Cut into squares or bars.
- Store in an airtight container in the refrigerator.
