- 4 cod fillets
- 1/4 cup almond flour
- Salt and pepper to taste
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tablespoons capers, rinsed
- Juice of 1 lemon
- Fresh parsley, chopped for garnish
Instructions
- Begin by seasoning the cod fillets with salt and pepper on both sides.
- Dredge each fillet in almond flour, ensuring they are evenly coated.
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
- Once the butter has melted and the oil is hot, add the cod fillets to the skillet.
- Cook the fillets for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- Remove the cooked cod from the skillet and set aside on a plate.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Stir in the capers and lemon juice, and let the mixture simmer for 2 minutes.
- Add the remaining 2 tablespoons of butter to the skillet, stirring until melted and the sauce is well combined.
- Return the cod fillets to the skillet, spooning the sauce over the top to coat.
- Garnish with fresh parsley before serving.
