  • 1/4 cup almond flour

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tablespoons capers, rinsed
  • Juice of 1 lemon
  • Fresh parsley, chopped for garnish

Instructions

  1. Begin by seasoning the cod fillets with salt and pepper on both sides.
  2. Dredge each fillet in almond flour, ensuring they are evenly coated.
  3. In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
  4. Once the butter has melted and the oil is hot, add the cod fillets to the skillet.
  5. Cook the fillets for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  6. Remove the cooked cod from the skillet and set aside on a plate.
  7. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  8. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
  9. Stir in the capers and lemon juice, and let the mixture simmer for 2 minutes.
  10. Add the remaining 2 tablespoons of butter to the skillet, stirring until melted and the sauce is well combined.
  11. Return the cod fillets to the skillet, spooning the sauce over the top to coat.
  12. Garnish with fresh parsley before serving.
