Ingredients

  • 1/2 cup powdered erythritol
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup sugar-free frosting (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the almond flour, powdered erythritol, baking powder, and salt.
  3. In a separate bowl, cream the softened butter until light and fluffy.
  4. Add the egg and vanilla extract to the butter, and mix until well combined.
  5. Roll the dough into balls, about 2 tablespoons each, and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Gently flatten each ball to about 1/2 inch thick using the palm of your hand.
