- 2 cups almond flour
- 1/2 cup powdered erythritol
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup sugar-free frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the almond flour, powdered erythritol, baking powder, and salt.
- In a separate bowl, cream the softened butter until light and fluffy.
- Add the egg and vanilla extract to the butter, and mix until well combined.
- Roll the dough into balls, about 2 tablespoons each, and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball to about 1/2 inch thick using the palm of your hand.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, frost the cookies with sugar-free frosting as desired.
