- 1 cup almond flour
- 1/4 cup coconut flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well to eliminate lumps.
- In another bowl, beat the eggs and then add melted butter. Mix until well combined.
- Gradually add the egg mixture to the dry ingredients, stirring until a dough forms.
- Fold in the shredded cheese and optional spices (garlic and onion powder) into the dough.
- Divide the dough evenly among the muffin tin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the cruffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
