Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well to eliminate lumps.
  3. In another bowl, beat the eggs and then add melted butter. Mix until well combined.
  4. Gradually add the egg mixture to the dry ingredients, stirring until a dough forms.
  5. Fold in the shredded cheese and optional spices (garlic and onion powder) into the dough.
  6. Divide the dough evenly among the muffin tin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the cruffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
