Description

A delicious low-carb version of traditional egg rolls filled with shredded cabbage, carrots, and cooked chicken, perfect for a keto diet.


Ingredients

  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1 cup cooked chicken, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon soy sauce (or tamari for gluten-free)
  • 1 package of low-carb egg roll wrappers
  • Cooking spray or additional oil for frying

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add shredded cabbage and carrots, and sauté for about 3-4 minutes until softened.
  2. Stir in the cooked chicken, garlic powder, onion powder, and soy sauce. Cook for an additional 2-3 minutes, mixing well until heated through. Remove from heat and let the filling cool.
  3. Lay out one egg roll wrapper on a clean surface with a corner pointing at you. Place 2-3 tablespoons of the filling in the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold the sides inwards. Roll the wrapper away from you to form a tight roll. Seal the edge with a little water if necessary.
  5. Repeat this process with the remaining wrappers and filling.
  6. Preheat a deep frying pan or air fryer to medium heat. If frying, add enough oil to cover the bottom of the pan. Spray or brush the egg rolls lightly with oil.
  7. Fry the egg rolls in batches for about 3-4 minutes on each side until golden brown and crispy. If using an air fryer, cook at 375°F (190°C) for 10-12 minutes, turning halfway through.
  8. Once cooked, place the egg rolls on a paper towel to drain excess oil. Serve hot with your favorite dipping sauce.

  • Can use tamari for gluten-free option.
  • Serve with various dipping sauces for added flavor.
