Description
A delicious low-carb version of traditional egg rolls filled with shredded cabbage, carrots, and cooked chicken, perfect for a keto diet.
Ingredients

- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1 cup cooked chicken, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon soy sauce (or tamari for gluten-free)
- 1 package of low-carb egg roll wrappers
- Cooking spray or additional oil for frying
Instructions
- In a large skillet, heat olive oil over medium heat. Add shredded cabbage and carrots, and sauté for about 3-4 minutes until softened.
- Stir in the cooked chicken, garlic powder, onion powder, and soy sauce. Cook for an additional 2-3 minutes, mixing well until heated through. Remove from heat and let the filling cool.
- Lay out one egg roll wrapper on a clean surface with a corner pointing at you. Place 2-3 tablespoons of the filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold the sides inwards. Roll the wrapper away from you to form a tight roll. Seal the edge with a little water if necessary.
- Repeat this process with the remaining wrappers and filling.
- Preheat a deep frying pan or air fryer to medium heat. If frying, add enough oil to cover the bottom of the pan. Spray or brush the egg rolls lightly with oil.
- Fry the egg rolls in batches for about 3-4 minutes on each side until golden brown and crispy. If using an air fryer, cook at 375°F (190°C) for 10-12 minutes, turning halfway through.
- Once cooked, place the egg rolls on a paper towel to drain excess oil. Serve hot with your favorite dipping sauce.
Notes
- Can use tamari for gluten-free option.
- Serve with various dipping sauces for added flavor.
- If baking instead of frying, adjust cooking time accordingly.
