Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced ham
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well.
  3. Add the egg and shredded cheese to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a clean surface for a couple of minutes until smooth.
  5. Divide the dough into equal portions, about the size of a golf ball.
  6. Roll each portion into a flat circle, approximately 1/4 inch thick.
  7. Place a spoonful of diced ham in the center of each circle, then sprinkle with garlic powder and dried oregano.
  8. Fold the dough over the filling to create a pocket and press the edges to seal.
  9. Place the hot pockets on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
