- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced ham
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well.
- Add the egg and shredded cheese to the dry ingredients. Mix until a dough forms.
- Knead the dough on a clean surface for a couple of minutes until smooth.
- Divide the dough into equal portions, about the size of a golf ball.
- Roll each portion into a flat circle, approximately 1/4 inch thick.
- Place a spoonful of diced ham in the center of each circle, then sprinkle with garlic powder and dried oregano.
- Fold the dough over the filling to create a pocket and press the edges to seal.
- Place the hot pockets on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
- These hot pockets can be customized with other fillings like vegetables or different meats.
- Store any leftovers in an airtight container in the fridge for up to 3 days.
