- 1 cup shredded cheddar cheese
- 4 jalapeños, diced (seeds removed for less heat)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 low-carb tortillas
- Optional toppings: Sour cream, green onions, or avocado
Instructions
- In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Preheat your oven to 400°F (200°C).
- Take one low-carb tortilla and place a generous amount of the chicken mixture in the center.
- Roll the tortilla tightly around the filling, making sure to seal the edges.
- Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
- Repeat steps 3-5 for the remaining tortillas and filling.
- Bake the taquitos in the preheated oven for 15-20 minutes, or until they are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
- Serve with optional toppings like sour cream, green onions, or avocado, if desired.
Notes
- Make sure to remove the seeds from jalapeños for less heat.
