- 2 eggs

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, erythritol, and cocoa powder.
- Add in eggs, vanilla extract, and melted coconut oil. Mix until a dough forms.
- Scoop out small portions of the dough and roll them into balls, about 1 inch in diameter.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until slightly golden.
- Allow to cool before filling with sugar-free jelly.
- Once cooled, use a piping bag to inject jelly into the center of each donut bite.
- Optional: Dust the tops with additional erythritol for a powdered sugar effect.
