Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil
  • Optional: additional erythritol for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, erythritol, and cocoa powder.
  3. Add in eggs, vanilla extract, and melted coconut oil. Mix until a dough forms.
  4. Scoop out small portions of the dough and roll them into balls, about 1 inch in diameter.
  5. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 12-15 minutes or until slightly golden.
  7. Allow to cool before filling with sugar-free jelly.
  8. Once cooled, use a piping bag to inject jelly into the center of each donut bite.
