Description

Keto Lemon Bar Cookies are a delicious low-carb dessert that combines the refreshing flavor of lemon with a buttery almond flour base, making them perfect for those following a keto diet.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup erythritol or preferred sweetener
  • ½ cup unsalted butter, melted
  • 3 large eggs
  • ¼ cup lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper for easy removal.
  2. In a mixing bowl, combine almond flour, erythritol, and salt. Mix well.
  3. Pour the melted butter into the dry ingredients and stir until combined.
  4. In a separate bowl, whisk the eggs, then add lemon juice and lemon zest. Mix until smooth.
  5. Add the egg mixture to the almond flour mixture and stir in baking powder until well incorporated.
  6. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  7. Bake in the preheated oven for about 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, cut into squares and enjoy!
