- 1 ½ cups almond flour
- ½ cup erythritol or preferred sweetener
- ½ cup unsalted butter, melted
- 3 large eggs
- ¼ cup lemon juice
- 2 teaspoons lemon zest
- 1 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper for easy removal.
- In a mixing bowl, combine almond flour, erythritol, and salt. Mix well.
- Pour the melted butter into the dry ingredients and stir until combined.
- In a separate bowl, whisk the eggs, then add lemon juice and lemon zest. Mix until smooth.
- Add the egg mixture to the almond flour mixture and stir in baking powder until well incorporated.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake in the preheated oven for about 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, cut into squares and enjoy!
