Description
A low-carb dish combining flavorful meatballs made from beef and served over spiralized zucchini noodles.
Ingredients

- 1 pound ground beef
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium zucchinis (for zoodles)
- 1 cup marinara sauce (sugar-free)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground beef, Parmesan cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and browned on the outside.
- While the meatballs are baking, spiralize the zucchinis to create zucchini noodles (zoodles). You can use a spiralizer or a vegetable peeler.
- In a large skillet, heat the marinara sauce over medium heat. Once hot, add the cooked meatballs and simmer for 5 minutes to allow the flavors to meld.
- In another skillet, lightly sauté the zoodles for 2-3 minutes until just tender. Season lightly with salt and pepper.
- Serve the meatballs over the zucchini noodles, spooning additional marinara sauce on top if desired.
Notes
- Optionally add grated cheese on top before serving.
- For extra flavor, add chopped herbs to the meatball mixture.
