- 1 cup natural peanut butter
- 1/2 cup granulated erythritol
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Sugar-free chocolate kisses (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the natural peanut butter and erythritol. Mix until well blended.
- Add the egg, vanilla extract, baking soda, and salt to the peanut butter mixture. Stir until all ingredients are fully incorporated and a dough forms.
- Scoop tablespoon-sized portions of the dough and roll them into balls. Place the balls on the prepared baking sheet, leaving space between them.
- Bake in the preheated oven for 10-12 minutes until the edges are golden. The tops may still look soft.
- Remove from the oven and let the cookies cool for 5 minutes on the baking sheet.
- Press a sugar-free chocolate kiss into the center of each cookie while they are still warm, allowing the chocolate to melt slightly.
- Transfer the cookies to a wire rack to cool completely.
