Keto Pop Tart Bars – A delicious low-carb treat perfect for breakfast or snack time!
Ingredients

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol sweetener
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free jam (any flavor)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a medium bowl, mix together almond flour, coconut flour, erythritol sweetener, and salt until well combined.
- Add the melted butter, egg, and vanilla extract to the dry ingredients, mixing until a dough forms.
- Divide the dough in half and press one half into the bottom of the prepared baking dish to form the base.
- Spread the sugar-free jam evenly over the base layer of dough.
- Roll out the second half of the dough between two pieces of parchment paper into a rectangle that fits over the jam layer.
- Place the rolled dough on top of the jam layer and pinch the edges to seal.
- Bake in the preheated oven for 20-25 minutes or until the top is lightly golden.
- Allow to cool in the baking dish for at least 10 minutes, then lift out using the parchment paper.
- Cut into bars and serve, or store in an airtight container in the refrigerator.
