Keto Pop Tart Bars – A delicious low-carb treat perfect for breakfast or snack time!


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol sweetener
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free jam (any flavor)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a medium bowl, mix together almond flour, coconut flour, erythritol sweetener, and salt until well combined.
  3. Add the melted butter, egg, and vanilla extract to the dry ingredients, mixing until a dough forms.
  4. Divide the dough in half and press one half into the bottom of the prepared baking dish to form the base.
  5. Spread the sugar-free jam evenly over the base layer of dough.
  6. Roll out the second half of the dough between two pieces of parchment paper into a rectangle that fits over the jam layer.
  7. Place the rolled dough on top of the jam layer and pinch the edges to seal.
  8. Bake in the preheated oven for 20-25 minutes or until the top is lightly golden.
  9. Allow to cool in the baking dish for at least 10 minutes, then lift out using the parchment paper.
  10. Cut into bars and serve, or store in an airtight container in the refrigerator.
