Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or preferred sweetener)
  • 1/4 cup unsalted butter, softened
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, and erythritol.
  3. Add the softened butter and mix until the mixture resembles coarse crumbs.
  4. Beat the egg in a separate bowl, then add it to the flour mixture. Mix until a dough forms.
  5. Divide the dough in half and roll each half between two sheets of parchment paper to about 1/8 inch thickness.
  6. Cut the rolled dough into rectangles (about 4×6 inches) and place them on the prepared baking sheet.
  7. In a small saucepan, heat your preferred sugar-free jam or filling until warm and spreadable.
  8. Place a tablespoon of the filling in the center of half of the dough rectangles, leaving a border.
  9. Top each filled rectangle with another dough rectangle and press the edges to seal. Poke a few holes in the top for steam to escape.
  10. Bake the pop tarts in the preheated oven for 15-20 minutes or until golden brown.
  11. Allow the pop tarts to cool completely before serving.
