- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or preferred sweetener)
- 1/4 cup unsalted butter, softened
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, and erythritol.
- Add the softened butter and mix until the mixture resembles coarse crumbs.
- Beat the egg in a separate bowl, then add it to the flour mixture. Mix until a dough forms.
- Divide the dough in half and roll each half between two sheets of parchment paper to about 1/8 inch thickness.
- Cut the rolled dough into rectangles (about 4×6 inches) and place them on the prepared baking sheet.
- In a small saucepan, heat your preferred sugar-free jam or filling until warm and spreadable.
- Place a tablespoon of the filling in the center of half of the dough rectangles, leaving a border.
- Top each filled rectangle with another dough rectangle and press the edges to seal. Poke a few holes in the top for steam to escape.
- Bake the pop tarts in the preheated oven for 15-20 minutes or until golden brown.
- Allow the pop tarts to cool completely before serving.
