- 1 cup almond flour
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour and baking powder. Mix well.
- In a microwave-safe bowl, melt the mozzarella cheese for about 1 minute until it becomes gooey and stretchy.
- Add the melted mozzarella to the bowl with almond flour and baking powder.
- Crack the two eggs into the mixture and stir until all ingredients are thoroughly combined and a dough forms.
- Scoop out small portions of the dough (about the size of a golf ball) and form them into rolls. Place them on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes or until the rolls are golden brown.
- Remove from oven and let cool slightly before serving.
