Delicious Keto Strawberry Cheesecake Bars that are low in carbs and sugar-free, perfect for a healthy dessert option.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsalted butter, melted
  • 2 tbsp erythritol (or preferred sweetener)
  • 16 oz cream cheese, softened
  • ½ cup powdered erythritol (or preferred sweetener)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
  2. In a mixing bowl, combine almond flour, melted butter, and erythritol. Mix until the mixture resembles a crumbly dough.
  3. Press the mixture into the bottom of the prepared baking dish evenly.
  4. Bake the crust for 10 minutes, then remove from the oven and allow to cool slightly.
  5. In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth.
  6. Add powdered erythritol, eggs, and vanilla extract to the cream cheese. Mix until fully incorporated and smooth.
  7. Fold in the diced strawberries gently into the cream cheese mixture.
  8. Pour the cream cheese mixture over the cooled crust, spreading it evenly.
  9. Bake in the oven for 25-30 minutes, or until the center is set and lightly golden.
  10. Allow the cheesecake bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
