- 1 ½ cups almond flour
- ½ cup unsalted butter, melted
- 2 tbsp erythritol (or preferred sweetener)
- 16 oz cream cheese, softened
- ½ cup powdered erythritol (or preferred sweetener)
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
- In a mixing bowl, combine almond flour, melted butter, and erythritol. Mix until the mixture resembles a crumbly dough.
- Press the mixture into the bottom of the prepared baking dish evenly.
- Bake the crust for 10 minutes, then remove from the oven and allow to cool slightly.
- In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth.
- Add powdered erythritol, eggs, and vanilla extract to the cream cheese. Mix until fully incorporated and smooth.
- Fold in the diced strawberries gently into the cream cheese mixture.
- Pour the cream cheese mixture over the cooled crust, spreading it evenly.
- Bake in the oven for 25-30 minutes, or until the center is set and lightly golden.
- Allow the cheesecake bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
Notes
- Ensure to use softened cream cheese for easier mixing.
- Feel free to substitute strawberries with other berries if desired.
