- 1 cup unsalted butter
- 1 cup brown sugar substitute (erythritol or similar)
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (optional)
- Pinch of salt
- Sugar-free chocolate chips (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, melt the unsalted butter over medium heat.
- Add the brown sugar substitute and stir until dissolved and combined with the butter.
- Stir in the vanilla extract and a pinch of salt. Mix well.
- Remove the saucepan from heat and let it cool for about 5 minutes.
- Line a baking dish with parchment paper. Pour the toffee mixture into the dish and spread evenly.
- If using, sprinkle the chopped nuts over the top of the toffee mixture.
- Bake in the preheated oven for 10 to 15 minutes until the edges are bubbly and golden.
- Remove the dish from the oven and let it cool for about 10 minutes before adding the sugar-free chocolate chips on top.
- Allow the chocolate chips to melt slightly, then spread them evenly over the cooled toffee.
- Let the toffee set completely at room temperature or refrigerate for quicker cooling.
- Once set, cut into bite-sized squares and enjoy!
