Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar substitute (erythritol or similar)
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional)
  • Pinch of salt
  • Sugar-free chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, melt the unsalted butter over medium heat.
  3. Add the brown sugar substitute and stir until dissolved and combined with the butter.
  4. Stir in the vanilla extract and a pinch of salt. Mix well.
  5. Remove the saucepan from heat and let it cool for about 5 minutes.
  6. Line a baking dish with parchment paper. Pour the toffee mixture into the dish and spread evenly.
  7. If using, sprinkle the chopped nuts over the top of the toffee mixture.
  8. Bake in the preheated oven for 10 to 15 minutes until the edges are bubbly and golden.
  9. Remove the dish from the oven and let it cool for about 10 minutes before adding the sugar-free chocolate chips on top.
  10. Allow the chocolate chips to melt slightly, then spread them evenly over the cooled toffee.
  11. Let the toffee set completely at room temperature or refrigerate for quicker cooling.
