- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsweetened peanut butter
- 1/4 cup erythritol or preferred keto sweetener
- 1/4 cup butter, melted
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips
- 2 tablespoons coconut oil
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine the almond flour, cocoa powder, erythritol, and salt.
- Add the melted butter and peanut butter to the dry ingredients, and mix until a dough forms.
- Press the dough evenly into the bottom of the prepared baking dish.
- Bake in the preheated oven for 15 minutes, then remove and let it cool completely.
- In another bowl, mix together the melted chocolate chips and coconut oil until smooth.
- Pour the chocolate mixture over the cooled crust and spread it evenly.
- Refrigerate the bars for at least 1 hour until the chocolate has set.
- Once set, cut into bars and serve.
- Store leftovers in an airtight container in the refrigerator.
