- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar-free caramel sauce
- 1/2 cup sugar-free dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and salt. Mix well until a dough forms.
- Press the dough evenly into the bottom of the prepared baking dish to form the base. Bake for 10-12 minutes or until just set. Remove from the oven and let cool.
- Once the base has cooled, spread the sugar-free caramel sauce evenly over the top of the base layer.
- In a small microwave-safe bowl, melt the sugar-free dark chocolate chips in the microwave in 30-second intervals, stirring in between until smooth.
- Pour the melted chocolate over the caramel layer and spread it evenly.
- Place the baking dish in the refrigerator for about 1 hour, or until the chocolate has set completely.
- Once set, remove the bars from the dish using the parchment paper. Cut into squares or bars as desired.
Notes
- For a creamier consistency, blend the melted coconut oil with the other ingredients.
- Make sure the chocolate is completely melted before pouring it over the caramel.
