- 1/4 cup unsweetened almond milk
- 2 tbsp erythritol (or preferred sweetener)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine the almond flour, baking powder, erythritol, and salt. Mix well.
- In another bowl, whisk the eggs, almond milk, and vanilla extract together until smooth.
- Gradually add the wet ingredients to the dry ingredients and stir until fully combined. The batter should be thick.
- Preheat your waffle maker according to the manufacturer’s instructions.
- Lightly grease the waffle maker with cooking spray or oil.
- Pour an appropriate amount of batter into the preheated waffle maker. Close the lid and cook until the waffles are golden brown and crispy.
- Carefully remove the waffles and serve them warm with toppings of your choice.
