- 1 large head of cauliflower
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 strips of bacon, cooked and crumbled
- 1/4 cup green onions, sliced
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the cauliflower into florets and steam them until tender, about 10-12 minutes.
- Drain the cauliflower and let it cool for a few minutes.
- In a large mixing bowl, combine the steamed cauliflower, sour cream, half of the cheddar cheese, salt, and pepper.
- Mash the mixture with a potato masher or fork until well combined but still slightly chunky.
- Stir in the crumbled bacon and half of the green onions.
- Transfer the cauliflower mixture to a greased baking dish and spread it evenly.
- Top with the remaining cheddar cheese.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown.
- Remove from the oven and garnish with the remaining green onions before serving.
Notes
- For extra flavor, consider adding garlic powder or onion powder to the mixture.
