Description

Loaded Cauliflower is a delicious low-carb dish that is perfect for those following a keto diet. It combines the creamy texture of sour cream and cheese with the crispy goodness of bacon, making it a satisfying option for any meal.


Ingredients

  • 1 large head of cauliflower
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 strips of bacon, cooked and crumbled
  • 1/4 cup green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the cauliflower into florets and steam them until tender, about 10-12 minutes.
  3. Drain the cauliflower and let it cool for a few minutes.
  4. In a large mixing bowl, combine the steamed cauliflower, sour cream, half of the cheddar cheese, salt, and pepper.
  5. Mash the mixture with a potato masher or fork until well combined but still slightly chunky.
  6. Stir in the crumbled bacon and half of the green onions.
  7. Transfer the cauliflower mixture to a greased baking dish and spread it evenly.
  8. Top with the remaining cheddar cheese.
  9. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown.
  10. Remove from the oven and garnish with the remaining green onions before serving.
